Gluten-free bakery opens
Jeanine and Eric Smith have opened Cole’s Fine Foods, a gluten-free bakery and commercial kitchen.They’ve taken 1,500 square feet at 521 E. Holland Ave., in north Spokane.
This is the couple’s first food business. Jeanine Smith had previously worked in health care management.
She adopted a gluten-free diet after she was diagnosed with celiac disease several years ago.
The store offers baked goods, granola, pizza (take and bake or by the slice), nine types of flour, cake mixes, crackers and other options.
Hours are 9 a.m. to 6:30 p.m., Monday-Friday, and 9 a.m. to 2 p.m. Saturdays.
Also in the works is a wholesale distribution service to provide items to the South Hill Huckleberry’s Natural Market, she said.

Jeanine Smith is an entrepreneur who has created a source for creative and delicious foods that not only appeal to those who are gluten intolerant, but those who enjoy delicious foods; such as baked goods, cheese balls, terrific granola, pizzas, and more. In the near future, Cole's Fine Foods will be available at local retailers like Huckleberry's and others.
